# What You’ll Need:

→ Vegetables

01 - 2 medium golden beets, peeled and cut into wedges
02 - 2 large carrots, peeled and sliced
03 - 1 large yellow bell pepper, cut into strips
04 - 1 small sweet potato, peeled and cubed
05 - 1 small red onion, cut into wedges

→ Citrus & Aromatics

06 - Zest and juice of 1 orange
07 - Zest and juice of 1 lemon
08 - 2 tablespoons extra-virgin olive oil
09 - 2 teaspoons honey or maple syrup
10 - 2 cloves garlic, minced
11 - 1 teaspoon fresh thyme leaves or ½ teaspoon dried
12 - ½ teaspoon ground turmeric
13 - Salt and freshly ground black pepper, to taste

→ Garnish

14 - 2 tablespoons chopped fresh parsley
15 - 1 tablespoon toasted pumpkin seeds, optional

# How-To Steps:

01 - Preheat the oven to 425°F. Line a large baking sheet with parchment paper.
02 - Combine golden beets, carrots, bell pepper, sweet potato, and red onion in a large bowl.
03 - Whisk together orange zest and juice, lemon zest and juice, olive oil, honey or maple syrup, garlic, thyme, turmeric, salt, and pepper in a small bowl.
04 - Pour the citrus dressing over the vegetables and toss until evenly coated.
05 - Spread the vegetables in a single layer on the prepared baking sheet.
06 - Roast for 30 to 35 minutes, stirring halfway through, until vegetables are golden and tender.
07 - Transfer to a serving platter. Garnish with parsley and pumpkin seeds if desired. Serve warm.
