01 - Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
02 - In a medium bowl, combine almonds, orange zest, lemon zest, honey (or maple syrup), olive oil, and sea salt. Toss until the almonds are evenly coated.
03 - Spread the coated almonds in a single layer on the prepared baking sheet.
04 - Bake for 8–10 minutes, stirring once halfway through, until fragrant and golden brown. Watch closely to avoid burning.
05 - Remove from the oven and let cool completely. The almonds will crisp up as they cool.
06 - Serve as a snack or sprinkle over salads, yogurt, or desserts.
