03 - Bring mixture to a gentle boil over medium heat.
04 - Reduce heat to low, cover with a tight-fitting lid, and simmer for 15 minutes until the liquid is absorbed and rice is tender.
05 - Remove saucepan from heat and let rice rest, covered, for 5 minutes to allow residual steaming.
06 - Uncover, gently fluff rice with a fork, then stir in lime zest and lime juice.
07 - Transfer rice to a serving bowl and garnish with freshly chopped cilantro if desired. Serve warm.
