01 - Rinse jasmine rice under cold water until water runs clear, removing excess starch for fluffy results.
02 - Heat coconut oil in medium saucepan over medium heat. Add rinsed rice and sauté 1 minute, stirring constantly to coat grains.
03 - Pour in coconut milk, water, and salt. Bring to gentle boil, reduce heat to low, cover and simmer 15 minutes until liquid is absorbed and rice is tender.
04 - Remove from heat and let stand covered 5 minutes. Fluff with fork, then stir in lime zest, lime juice, and cilantro.
05 - While rice rests, heat olive oil in large skillet over medium heat. Add minced garlic and sauté 30 seconds until fragrant.
06 - Add spinach, salt, pepper, and red pepper flakes. Sauté, tossing frequently, until wilted and bright green, 2-3 minutes.
07 - Serve coconut lime jasmine rice topped with or alongside sautéed spinach immediately while hot.
