11 - 2 tablespoons fresh lemon juice
12 - 1 teaspoon Dijon mustard
13 - 1/2 teaspoon honey or maple syrup

01 - Rinse farro under cold water. In a medium saucepan, combine farro, water, and 1/2 teaspoon salt. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes until farro is tender but still chewy. Drain any excess water and let cool slightly.
02 - In a large bowl, whisk together olive oil, lemon juice, Dijon mustard, honey (or maple syrup), black pepper, and a pinch of salt until well combined.
