01 - Bring farro and water or broth to a boil in a medium saucepan with 1/2 teaspoon salt. Reduce heat and simmer uncovered for 20–25 minutes until tender but still chewy. Drain any excess liquid and let cool slightly.
02 - In a large bowl, combine the cooked farro, cherry tomatoes, cucumber, olives, red onion, feta cheese, parsley, and mint.
03 - Whisk together the olive oil, lemon zest and juice, minced garlic, oregano, black pepper, and additional salt to taste in a small bowl or jar.
