# What You’ll Need:

→ Smoothie Base

01 - 1 cup frozen pineapple chunks
02 - 1 large ripe banana, fresh or frozen
03 - ¾ cup unsweetened coconut milk, canned or carton
04 - ¼ cup plain coconut yogurt, or dairy-free alternative
05 - 2 teaspoons chia seeds, optional for thickness
06 - 1 tablespoon maple syrup or honey, optional and adjusted to taste

→ Toppings

07 - ⅓ cup coconut chips
08 - ½ banana, sliced
09 - ¼ cup fresh pineapple, diced
10 - 2 tablespoons granola, gluten-free if needed
11 - 1 tablespoon chia seeds or hemp seeds, optional
12 - Fresh mint leaves, optional garnish

# How-To Steps:

01 - Heat a dry skillet over medium heat. Add the coconut chips and toast for 2 to 3 minutes, stirring frequently, until golden and fragrant. Remove from heat and set aside to cool.
02 - In a blender, combine the frozen pineapple chunks, banana, coconut milk, coconut yogurt, chia seeds, and maple syrup or honey if using. Blend until smooth and creamy. If the mixture is too thick, add a splash more coconut milk to reach your desired consistency.
03 - Divide the smoothie base evenly between two bowls. Arrange the sliced banana, diced pineapple, granola, chia or hemp seeds, and toasted coconut chips on top. Garnish with fresh mint leaves if desired.
04 - Serve immediately and enjoy while cold.
