08 - 1 red bell pepper, thinly sliced
09 - 2 green onions, thinly sliced

→ Sesame Ginger Dressing

10 - 2 tbsp soy sauce
11 - 1 tbsp toasted sesame oil
12 - 1 tbsp rice vinegar
13 - 1 tbsp maple syrup
14 - 1 tbsp fresh ginger, finely grated
15 - 1 clove garlic, minced
16 - 1 tsp sriracha

→ Garnish

17 - 2 tbsp toasted sesame seeds
18 - Fresh cilantro, chopped
19 - Lime wedges

# How-To Steps:

01 - Preheat the oven to 425°F.
02 - Rinse the brown rice under cold water. In a medium saucepan, combine rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 30-35 minutes until tender. Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork.
03 - Place broccolini on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat. Roast for 15-18 minutes, turning once, until tender and slightly crispy at the tips.
04 - In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, maple syrup, ginger, garlic, and sriracha until well combined.
