01 - Preheat the oven to 425°F.
02 - Rinse the brown rice under cold water. In a medium saucepan, combine rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 30-35 minutes until tender. Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork.
03 - Place broccolini on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat. Roast for 15-18 minutes, turning once, until tender and slightly crispy at the tips.
04 - In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, maple syrup, ginger, garlic, and sriracha until well combined.
05 - In a large serving bowl, combine cooked rice, roasted broccolini cut into bite-size pieces, bell pepper, and half the green onions. Pour over the dressing and toss gently to combine.
06 - Garnish with sesame seeds, remaining green onions, and fresh cilantro. Serve with lime wedges if desired.
