01 - Wash the kale thoroughly, remove the tough stems, and chop the leaves into bite-sized pieces.
02 - Heat the olive oil in a large skillet over medium heat. Add the sliced onion and sauté for 2–3 minutes until softened.
03 - Stir in the minced garlic and cook for 30 seconds until fragrant.
04 - Add the cumin, coriander, smoked paprika, and chili flakes (if using). Stir well for 1 minute to toast the spices.
05 - Add the chopped kale and toss to coat with the onion and spice mixture. Cook, stirring frequently, for 4–5 minutes until the kale is wilted but still vibrant green.
06 - Season with salt and pepper, then drizzle with lemon juice. Toss to combine.
07 - Remove from heat and sprinkle with toasted pumpkin seeds, if desired. Serve warm.
