Spicy Garlic Roasted Broccoli Bowl (Printable)

# What You’ll Need:

→ Vegetables

01 - 1 large head broccoli, cut into florets
02 - 1 red bell pepper, sliced
03 - 1 yellow bell pepper, sliced
04 - 1 small red onion, sliced
05 - 1 medium carrot, julienned
06 - 1 cup cherry tomatoes, halved
07 - 2 cups cooked quinoa or brown rice (optional, for serving)

→ Garlic and Spice Oil

08 - 4 tablespoons olive oil
09 - 4 garlic cloves, minced
10 - 1 to 2 teaspoons red chili flakes, adjust to taste
11 - 1 teaspoon smoked paprika
12 - 1/2 teaspoon ground cumin
13 - Salt and black pepper, to taste

→ Garnish

14 - 2 tablespoons toasted sesame seeds
15 - 2 tablespoons fresh cilantro or parsley, chopped
16 - 1 lime, cut into wedges

# How-To Steps:

01 - Preheat the oven to 425°F. Line a large baking sheet with parchment paper and set aside.
02 - In a small saucepan, heat olive oil over medium-low heat. Add minced garlic and sauté for 1 to 2 minutes until fragrant but not browned. Stir in chili flakes, smoked paprika, cumin, salt, and black pepper. Remove from heat and let cool briefly.
03 - Place broccoli florets, bell peppers, red onion, and carrot in a large mixing bowl. Pour the garlic spice oil over the vegetables and toss thoroughly to ensure even coating.
04 - Spread the coated vegetables in a single layer on the prepared baking sheet. Roast for 20 to 25 minutes, stirring halfway through, until the broccoli is golden and slightly crispy and all vegetables are tender.
05 - If using, warm the cooked quinoa or brown rice and divide evenly among four serving bowls.
06 - Top each bowl with the roasted vegetables and halved cherry tomatoes. Sprinkle with toasted sesame seeds and fresh chopped herbs.
07 - Serve immediately with lime wedges on the side for squeezing over the bowl.
