# What You’ll Need:

→ Shrimp

01 - 14 oz large shrimp, peeled and deveined
02 - 1 tbsp lime juice
03 - 1 tsp chili flakes or 1 small fresh red chili, finely chopped
04 - 1/2 tsp salt
05 - 1/4 tsp black pepper

→ Rice

06 - 3 cups cooked jasmine rice, chilled (preferably day-old)

→ Aromatics

07 - 2 tbsp vegetable oil
08 - 3 cloves garlic, finely minced
09 - 1 medium onion, finely diced

10 - 1 medium red bell pepper, diced
11 - 1 cup frozen peas, thawed

13 - 2 tbsp soy sauce
14 - 1 tbsp fish sauce

01 - Toss shrimp with lime juice, chili flakes, salt, and black pepper in a bowl. Let marinate for 10 minutes while preparing other ingredients.
02 - Heat 1 tbsp vegetable oil in a large wok or skillet over medium-high heat. Add shrimp and sauté for 2–3 minutes until pink and just cooked through. Remove shrimp and set aside.
03 - Add remaining oil to the pan. Sauté garlic and onion for 1–2 minutes until fragrant and translucent.
04 - Add bell pepper and peas; stir-fry for 2–3 minutes until slightly tender.
05 - Increase heat to high. Add chilled rice and break up any clumps. Stir-fry for 2–3 minutes until heated through and slightly crispy.
06 - Pour in soy sauce, fish sauce, oyster sauce, sesame oil, and lime zest. Toss to combine thoroughly.
07 - Return shrimp to the pan along with sliced spring onions and half each of the cilantro, mint, and basil. Toss everything together for 1 minute to blend flavors.
