01 - Preheat oven to 325°F. Line a baking sheet with parchment paper.
02 - In a medium bowl, combine almonds, maple syrup, sea salt, and cinnamon if using. Stir to coat evenly.
03 - Spread almonds in a single layer on the prepared baking sheet.
04 - Bake for 18–20 minutes, stirring halfway through, until almonds are golden and fragrant.
05 - Remove from oven and let cool completely on the baking sheet—almonds will crisp as they cool.
06 - Break apart any clusters and store in an airtight container.
